Spelt is an ancient grain in the wheat family. Its mild sweet and nutty flavor is great in flatbread and fluffy loaves. For optimum flavor store in freezer. We lightly sift this flour to take out only the largest pieces of bran, which improves it's performance in breads and pastries.
